Apple Fritter Cake with a sweet vanilla glaze is a delightful treat that combines the flavors of cinnamon and Granny Smith apples. This moist cake features a creamy layer of Greek yogurt and is topped with a delicious glaze, making it perfect for fall desserts.
Preheat oven to 350°F and line a 9x13 pan with parchment paper.
In a saucepan, combine Granny Smith apples, granulated sugar, cinnamon, cornstarch, and water. Heat for 5 minutes or until apples soften and the liquid thickens. Set aside to cool.
Mix dark brown sugar and cinnamon in a small bowl and set aside.
In a bowl, whisk together flour, baking powder, baking soda, kosher salt, and cinnamon. Set aside.
In a stand mixer, cream the butter and granulated sugar together until fluffy. Add eggs one at a time, then applesauce and vanilla. Mix until combined.
Add the dry mixture and Greek yogurt in alternating parts. Mix until just combined.
Spread 1/2 of the cake batter in the prepared pan. Top with the apple mixture and 2/3 of the brown sugar. Cover with the remaining batter and sprinkle the remaining 1/3 of brown sugar on top.
Bake for 35-40 minutes, or until the center of the cake is set.
While the cake is baking, make the glaze by mixing powdered sugar, milk, and vanilla until smooth.
Once the cake is done, poke holes in it using a butter knife and pour the glaze over the top, spreading to cover completely. Let the glaze set for about 20 minutes before serving.
