A delightful Valentine's treat made with pie crust shaped like envelopes, filled with strawberry jam and optional cherry pie filling, then baked to golden perfection. Perfect for making with little ones.
Preheat the oven to 375°F and line a large baking sheet with parchment paper.
On a lightly floured surface, roll out 1 pie crust.
Using a paring knife, cut out long diamond shapes, about 4 inches on each side.
Transfer diamonds to the baking sheet and reroll extra dough to make more diamonds.
Fill the center of each diamond with a very small dollop of strawberry filling.
Fold three of the corners into the center to form an open envelope shape and press down lightly to seal.
Use a small heart cookie cutter to stamp out remaining dough into hearts and place a heart in the center of each envelope.
Brush the envelopes with egg wash and sprinkle with sugar.
Bake until the envelopes are golden, about 15 minutes. Optionally, add a few cherries on top before baking.
