Ciambella Cake

1: Preheat your oven to 350F. Spray a tube or Bundt pan with baking spray and set aside.

2: Add 1 tsp of the flour to the bowl with 1/2 cup of the chocolate chips and toss until they are coated in flour. Set aside.

3: In a mixing bowl, whisk together 2 cups of the flour, baking powder, and salt. Set aside.

4: In another mixing bowl, combine the eggs, yolk, sugar, and vanilla. Beat with an electric mixer on medium speed until fluffy.

5: Add in the olive oil and beat until combined.

6: Beat in the ricotta until just incorporated.

7: Beat in the dry ingredients until just incorporated, being careful not to over mix. The batter will be thick.

8: Fold in the chocolate chips tossed in flour and spoon the batter into the prepared pan.

9: Bake for 40 minutes.

10: Cool and dust with confectioners sugar.
