1: In a bowl, combine the flour with salt, black pepper, garlic powder, onion powder, and smoked paprika.

2: In another bowl, beat the eggs.

3: Dredge each piece of fish in the flour mixture, shaking off the excess, then coat with beaten egg.

4: Heat a large sauté pan to medium heat and add the olive oil and 2 tablespoons of butter.

5: When the pan begins to foam, add the fish and cook for about 4 minutes per side or until golden brown.

6: Once done, wipe out the pan and add the remaining tablespoon of butter.

7: Add the chopped garlic and lemon slices, and cook for 30 seconds.

8: Add the baby spinach, season with salt and pepper, and cook until it begins to wilt, about 1-2 minutes.

9: Pour in the white wine, vegetable stock, lemon juice, and lemon zest. Bring the sauce to a boil and simmer for 2 minutes.

10: Add the cooked cod back to the skillet and let cook together for one minute.

11: Sprinkle with chopped parsley before serving.
