This creamy orzo dish combines sautéed shrimp with mushrooms and peas, all cooked in one skillet for easy serving. It's versatile enough to be a side or a standalone meal when served with roasted broccoli, and can even be made seafood-free!
Season shrimp with salt, pepper, garlic powder, and smoked paprika.
Heat the oil in a skillet over medium high heat and cook the shrimp about 2 minutes on either side. Remove from the skillet and set aside.
In the same skillet, add the shallots, garlic, and mushrooms and sauté until fragrant, about 3-4 minutes.
Stir in the orzo and cook for a few minutes.
Add the broth and fresh thyme and cook, stirring often, until the orzo is cooked and the liquid absorbs, about 10-12 minutes.
Add the peas, cream, lemon zest, lemon juice, and chili flakes, then stir to combine.
Incorporate the Parmesan cheese and stir well. If the orzo gets too dry, add more broth as needed.
Add the shrimp back to the skillet and cook for one more minute.
