Gochujang-Roasted Carrots

1: Preheat the oven to 400°F and line a sheet pan with parchment paper.

2: Cut the carrots into pieces about the size of your index finger (cut large carrots lengthwise into halves or quarters).

3: Toss the carrots with vegetable oil on the sheet pan.

4: Roast the carrots for 10 minutes.

5: Stir the carrots and continue roasting until beginning to brown on the edges, about 10 minutes.

6: In a small bowl, stir together Gochujang, lime juice, soy sauce, sesame oil, maple syrup, ginger, and garlic.

7: Pour the gochujang mixture over the carrots and toss to coat. Season with salt.

8: Return to the oven and continue roasting until the carrots are tender and glazed, about 10 minutes.

9: Serve on a platter and sprinkle with scallion, sesame seeds, and parsley.
