This quiche with a hash brown crust is a perfect dish for a special brunch. Easily customizable with various veggies, this recipe features raw shredded potatoes, ground pork sausage, and a blend of fresh ingredients.
 Preheat oven to 375°F.
Coat a 9-inch pie plate with non-stick cooking spray.
In a large bowl, toss the hash browns with melted butter to coat. Season with salt and pepper. Press the hash browns into the bottom and up the sides of the plate to form a crust.
Bake for approximately 25-30 minutes or until golden brown.
Meanwhile, sauté the ground sausage in a skillet over medium-high heat until no pink remains, about 5-8 minutes. Remove to a plate.
In the same skillet, sauté the onions until tender, about 5 minutes. Add the spinach and stir until wilted. Remove from heat and let cool.
In the large bowl used for the hash browns, whisk together the eggs, heavy cream, cheddar cheese, scallions, and all seasonings. Add in the cooked sausage and mix to combine.
To the crust, add the spinach and onions, then pour the egg mixture on top.
Bake for approximately 30 minutes or until set. Let cool slightly, then cut into wedges.
