Hummingbird Cake

1: Preheat oven to 350°F. Spray two 9” round cake pans with cooking spray.

2: In a small bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.

3: In a large bowl, whisk together bananas, pineapple, oil, eggs, and vanilla until combined.

4: Fold the dry ingredients into the wet ingredients until just smooth; do not beat.

5: Fold in 1 cup of pecans and spread the batter evenly into the prepared pans.

6: Bake until cakes are done in the center, about 30 to 35 minutes. Allow to cool for 10 minutes.

7: For the frosting, beat together cream cheese and butter until smooth.

8: Add vanilla and slowly incorporate powdered sugar, mixing until smooth.

9: Frost the cooled cakes and sprinkle with remaining chopped pecans.
