These homemade Monster Bagels are a ghoulishly fun Halloween breakfast made with simple ingredients. They feature a dough that rises overnight and are topped with spooky decorations like candy eyes and slivered almonds for a creepy effect.
Whisk the warm water and yeast together in the bowl of your stand mixer fitted with a dough hook attachment. Cover and allow to sit for 5 minutes.
Add the flour, brown sugar, and salt. Beat on low speed for 2 minutes.
Turn the dough out onto a lightly floured surface and knead the dough for 4-5 minutes.
Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with plastic wrap and a kitchen towel.
Let the dough rise at room temperature for 60-90 minutes or until double in size.
Line two large baking sheets with parchment paper.
When the dough is ready, punch it down to release any air bubbles. Divide the dough into 8 equal pieces and shape each piece into a ball.
Press your index finger through the center of each ball to make a hole in the middle.
Cover the shaped bagels with a kitchen towel and let rest while water boils.
 Preheat the oven to 425°F.
In a wide pot, boil the water and whisk in the honey.
Drop bagels in, 2-3 at a time, boil for 1 minute on each side, and remove to the sheet pan.
Brush each with the egg wash on top and around the sides and sprinkle with whatever topping you want.
Bake for 20-25 minutes or until golden brown.
