A flavorful dish combining overcooked broccoli to create a pesto-like consistency that beautifully coats al dente pasta. This recipe features garlic and chili flakes, enhancing the flavors, making it a simple and satisfying meal.
Cook one lb of pasta in salted boiling water until al dente.
In a small pot, combine 1/2 cup olive oil, 6-8 chopped garlic cloves, and 1/2 tsp chili flakes. Bring to a slow simmer until the garlic begins to get golden, then remove from heat and set aside.
Cook the broccoli in salted water until it can be easily broken apart with a fork.
Remove the broccoli from the stove, drain it, and place it in a large bowl. Salt and pepper the broccoli.
Smash the broccoli using a large fork or potato masher.
When the pasta is al dente, drain it, saving 1/2 cup of pasta cooking water.
Add the drained pasta to the broccoli, pouring the garlic and olive oil over it. Toss to combine and check for seasoning, adding more salt and pepper if needed.
Add desired amounts of parmesan and the saved cooking water, tossing to combine.
Top with more chili flakes and parmesan if desired, and drizzle with olive oil.
