Puff Pastry Apple Roses

1: Preheat oven to 400F.

2: Spray a 6-cup muffin tin with non-stick spray and set aside.

3: Cut the apples in half, remove the core, and slice them into very thin slices, leaving the peel on.

4: Place the sliced apples in a microwave-safe bowl, sprinkle with 2 tbsp of sugar, and coat gently.

5: Microwave the apples on high power for 2 minutes to soften, then remove and sprinkle with lemon juice.

6: Let the apples cool for 15 minutes and then drain in a strainer over a bowl.

7: Reserve the juice and mix it with the apricot jam.

8: Roll out the puff pastry on a floured surface and cut into 3 strips per sheet.

9: Mix the remaining 2 tbsp of sugar with cinnamon in a small bowl.

10: Arrange the apple slices in a shingle pattern over the top edge of one dough strip, with the skins overhanging.

11: Brush the bottom part of the dough with jam and sprinkle with cinnamon sugar.

12: Fold the bottom part of the dough and roll it up to resemble a rose.

13: Place the rose into one of the muffin tin cups and repeat with the remaining strips.

14: Bake for 40-45 minutes until golden brown.

15: Remove from the oven and brush the tops with the jam mixture.
