A delicious roasted tomato sauce made with grape or cherry tomatoes, olive oil, garlic, fresh basil, and served over any pasta of your choice. This sauce is flavorful and perfect for pasta dishes, and can be refrigerated for up to 2 days.
 Preheat the oven to 400°F.
Toss the tomatoes and olive oil on a half-sheet pan. Sprinkle with salt and pepper.
Roast the tomatoes, stirring occasionally, until tender and starting to collapse, about 30 minutes.
Heat additional olive oil in a medium saucepan over medium heat.
Add slivered garlic and cook, stirring often, until garlic softens, about 2 minutes.
Add the roasted tomatoes, their juices, whole basil leaves, and pepper flakes to the saucepan.
Bring to a simmer. Cover the saucepan, leaving the lid ajar, and reduce heat to low.
Cook, stirring occasionally, to blend flavors for about 15 minutes.
Using an immersion blender, puree the sauce in the saucepan until the desired consistency is reached.
Serve over pasta with Parmesan or ricotta.
