Spinach & Cheese Puffs

1: In a large bowl, combine thawed and squeezed spinach with the remaining filling ingredients and stir to combine.

2: Place a piece of puff pastry on a lightly floured cutting board and cut in half to create 2 rectangles, totaling 4.

3: Divide the filling between the pastries, brush the edges with egg wash, then roll up, finishing with the seam side down.

4: Refrigerate for 30 minutes (or overnight).

5: Preheat the oven to 350°F.

6: Line 2 baking sheets with parchment paper and cut each roll into 4 pieces.

7: Brush the tops with egg wash and sprinkle with sesame seeds.

8: Bake for 30 minutes or until golden brown and puffed.

9: Serve on their own or with tomato sauce.
