Whipped Ricotta with Honey

1: Add ricotta to a food processor and blend to smooth.

2: While blending, add 2 tablespoons of olive oil and blend until creamy.

3: If you want it a bit looser, add a tablespoon or two of heavy cream.

4: Transfer the ricotta to a bowl, drizzle with remaining olive oil, and pour the warm honey on top.

5: Sprinkle with black pepper, course salt, red chili flakes, and chopped parsley.

6: Toast some bread and spread the ricotta mixture on top.

7: For hot honey, add honey and chili flakes to a small pot over medium heat.

8: Gently heat until small bubbles form along the edges, then remove from heat.

9: Let the honey infuse for 5 minutes, then add hot sauce and vinegar.
